
Chocolate Chip Banana Muffins
Moist, tender banana muffins loaded with chocolate chips and made in one bowl with simple pantry staples. Ripe bananas bring natural sweetness, and the muffins bake up soft with melty pockets of chocolate. Perfect for breakfast, snacks, lunchboxes, or freezing for later.
Equipment
- medium-size muffin baking pan (time for baking may vary depending on size)
- baking or oil spray
- mixing bowl
- storage dish
Ingredients
- 1½ cups flour
- 1-1¼ cups sugar
- ⅓ cup melted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 large egg
- 3 large bananas
- 6 oz chocolate chips
Instructions
- Preheat oven to 350°F.
- Combine together the banana, butters, sugar, and egg in a mixing bowl.
- Add the rest of the ingredients: flour, baking powder and soda, salt, and chocolate chips. Mix until combined.
- Grease the baking tin.
- Add batter to muffin baking pan, about half way up or slightly more per muffin hole.
- Baking for around 20 minutes. Be sure to watch for browning.
- After finishing, let cool in muffin pan for 20-30 minutes.
- Store at room temperature, covered, for up to a few days.
