
Chocolate Covered Needhams
A classic Maine treat, Chocolate Covered Needhams feature a sweet coconut and mashed potato filling coated in rich chocolate. The potatoes add a surprisingly smooth texture while keeping the candy moist. Perfect for holidays, gifts, or indulging in a unique regional dessert.

Ingredients
- 4 cups confectioners sugar 2-3 cups if you want something less sweet, although you may need to reduce wet ingredients slightly
- 14 oz sweetened shredded coconut
- 1 cup mashed potatoes
- 2 tsp vanilla extract
- ½ tsp salt
- 3-4 cups chocolate chips
- 2 tbsp unsalted butter or oil optional; use for consistency
Instructions
- Make mashed potatoes by combining potatoes and salt. Set aside.
- In another bowl, combine sugar, coconut, butter (optional), and vanilla extract.
- Add the mashed potatoes to this. Place the bowl in the microwave, heating on low-medium power for 45-second intervals, stirring well after each interval, until the mixture is warmed through and mostly combined. What’s left should be a warm combination where the sugar is fully combined, and the texture is soft and moist.
- Scoop the concoction onto a parchment-lined baking sheet or plate. Place this in the fridge or freezer for 30-45 minutes to firm.
- Melt the chocolate chips.
- Take the baking sheet out and cut pieces accordingly (squares, circles, keep them as a whole pan, etc). Dip these into the melted chocolate (or cover with chocolate), then set aside on a parchment-lined baking pan or plate.
- Store at room temperature for up to 3 days or fridged or frozen for several more.
