Equipment
- stand or hand mixer whisk attachment
- pan or dish
- parchment paper
- microwavable bowl
Ingredients
- 7 g powdered gelatin full small packet of gelatin
- ½ cup sweetener
- ½ cup water
- 1 tsp flavored extract of your choice
Instructions
- Combine gelatin and 1/4 cup water to mixer bowl. Set aside.
- Combine rest of water with sweetener and flavored extract. Microwave for 2-3 minutes, until sweetener dissolves.
- Add the sweetened water to the mixer bowl.
- Set to medium-high for 7-10 minutes, until mixture thickens and achieves stiff peaks.
- Add this thickened mixture to a parchment lined dish. Refridergat for 2 hours or freeze for 1 hour.
- After solidifying fully, cut into cubes or enjoy as is. Store in fridge or freezer for up to several days.
Notes
- Any flavor extract will work. Vanilla is an example.
- These remain thick and chewy when stored in the freezer.
- Top with cinnamon, sugar, and other toppings as needed.
