
Low 100-Calorie Dark Chocolate Brownies (Keto and Calorie Friendly)
Rich, fudgy low 100-calorie dark chocolate brownies made with oat fiber and dark cocoa — keto-friendly and packed with deep chocolate flavor without the guilt.
Equipment
- 8×8 inch baking pan
 - parchment paper
 - large mixing bowl
 - large spoon or paddle
 
Ingredients
- 353 g diet cola
 - 135 g Swerve
 - 70 g oat fiber
 - 50 g dark cocoa powder or regular
 - 5-6 pumps sweetened flavored mixes (example: Jordan's Skinny Syrups)
 - 3 g baking powder
 - Dash of salt
 - Dash of xanthan gum optional
 
Instructions
- Combine all of the dry ingredients in a large mixing bowl.
 - Add the diet cola and gently fold in with spoon or paddle. Do not overmix.
 - Line the baking pan with parchment. Dump in brownie mixture.
 - Bake for 45-50 minutes at 375°F or until brownie is mostly solid.
 - Take out of oven and let cool for 15 minutes.
 - Either eat or store at room temperature for up to a few days. If you fridge or freeze these, it may change the texture to more crumbly and hard quickly.
 
Notes
- I found lower calorie options that are very similar. You may need to experiment slightly.
- 80 Calories: You may be able to use 40 g or less cocoa powder to bring down the calories. I did it with: 90 g oat fiber, 150 g Swerve, and 8-9 pumps of sugarless syrup, and baking it for an hour at 375°F.
 - 50 Calories: I used 25 g cocoa powder, 110 g oat fiber, 165 g Swerve, 10 pumps of sugarless syrup flavoring of your choice, 450 g diet cola, and baked it for around 65-75 minutes minutes.
 
 - You can also make different flavors using Jell-O pudding packets. They range from 30-100 calories for an 8×8 inch pan.
- 25 g (4 servings) sugar-free Jell-O pudding powder (any flavor works, including fruit-based ones), 110 g oat fiber, 165 g Swerve, 450 g diet cola or cream soda, 10 pumps of sugarless syrup flavoring of your choice, and baked it for around 70-75 minutes.
 
 - Most of my batches come out on the thinner side.
